THOMASVILLE TOMMEGRASS BASED COW’S CHEES
A homage to our hometown, Thomasville Tomme is an aged, raw cow’s cheese made in the style of a French Pyrenees Tomme. Each wheel is handcrafted and aged for at least 60 days. It has a semi-firm golden interior and finishes tangy and slightly salty. Like that of a traditional, farmhouse table cheese, Tomme has a natural, earthy rind and is versatile enough to be your everyday go-to.
GREEN HILLgrass based cow’s cheese
Our flagship double-cream, soft-ripened cheese was uniquely developed in a Camembert-style by our owner Jeremy Little. Its buttery flavor, silky texture and thin, bloomy rind highlight the quality of our milk. Each wheel is individually hand-ladled and ripened for two weeks before we hand wrap them for shipping. Green Hill is an eight-time winner at the American Cheese Society Annual Conference.
ASHER BLUEGRASS BASED COW’S CHEESE
Asher Blue is one of the few blue cheeses with a natural rind being made in the United States today. Asher is a raw cow’s milk cheese, aged approximately 90 days. We pierce it over 50 times on each side of the wheel to produce its characteristic blue veins. Named after the owner’s second son, Asher is a complex blue with subtle mushroom notes, a creamy interior and a surprisingly mild finish.
FRESH CHEESE SPREAD ORIGINALMADE WITH lil’ moo cheese
Lil’ Moo is our absolute freshest and most versatile cheese. In four days, we’ve milked the cows, made the cheese, and packaged it up for selling. Soft, creamy and pasteurized, it’s similar to cream cheese but lighter because we use whole milk instead of cream. Our unique recipe gives Lil’ Moo Original a more spreadable consistency that’s great on bagels, alongside fruit or added to your lasagna recipe. Its distinguishing faint yellow coloring and incredible taste comes from our grass based cow’s milk.
HEATGRASS BASED COW’S CHEESE
Heat is mildly spicy coupled with a natural smokiness that’s decidedly different from your average pepperjack. Each wheel is handcrafted and aged at least 60 days to create a semi firm, flavored cheese. Real chili peppers including Pasilla and Ancho provide the kick while the Chipotle and Paprika give Heat its smokiness. This cheese melts well and will spice up your favorite meals.
